Award winning hot kiln roasted smoked salmon, completely hand produced. We raise the temperature in the kiln as we smoke whole sides of Scottish salmon with beech wood for a gentle and delicious smokey flavour and carefully top them with our own recipe pepper crust. This method gently cooks the fish as it smokes, then we remove it from the smoker before it begins to dry to allow us to retain the perfect level of moisture in the fish. The whole sides are unsliced and ready to portion. We recommend slicing only when the salmon is very cold and with a very sharp knife to get the perfect portion. Perfect with eggs for breakfast, as a starter, canapes,  or sandwich filler.  This fish can be kept in steaks but is soft enough to be spread or mixed easily into pâté and such.

Our whole side varies in weight but will weight a minimum of 1.2kg and will provide 10 to 20 delicious servings depending on portion size.

This product can be frozen.
